INGREDIENTS (Serves 2):
1 Avocado
Coriander
2 Spring onions
Lime
1 tin Black Beans
2 medium Sweet potato
Optional 30g feta / chilli flakes
DIRECTIONS:

Preheat the oven to 180 degrees & line a tray with baking paper.

Pierce the potatoes and pop in the Microwave for about 5mins (speeds things up)

Pop your potato in the oven and Bake for around 25-30 min

Smash up the avocado in a bowl

Add finely cut spring onions, a squeeze of lime & 1 tbsp of finely cut coriander.

Rinse the Black Beans & mix into the guacamole.

Let the potatoes cool for about 5 mins and then gently fold open and fluff up the insides

Fill will your Guac mix and sprinkle if you wish with a little crumble feta or chilli flakes.
