We all have those times where we have everything and anything in our fridge so why not create a delicious and voluminous salad to use up all our delicious ingredients in a high-protein salad that will become your new summer staple.
First for the dressing you will need:
120g Plain Greek Yogurt (Maeve prefers 2%)
20-30g Sriracha (Depending on your preferences)
Juice from 1 small lime
½ of the lime zest
Sea salt
Black pepper

For the salad you will need:
500g Chicken
300g Lettuce of choice (Maeve uses Romaine)
200g Unsweetened corn
100g Peppers
100g Red onion
100g Cherry Tomatoes
20g Jalapeños (depending on your taste)
20g Grated Parmesan
15g Corriander
Sea salt

It’s a salad, so simply mix it all up. You can cut your chicken into pieces and add some seasoning before popping it into the air fryer for 9 minutes. Add the dressing depending on how spicy you like your salads and most importantly - enjoy queens!
