Watermelon Salad

INGREDIENTS (SERVES 2 - rough guide):

Watermelon 200g (about half a watermelon)

1/2 cucumber peeled

2 spring onions Finley chopped (you can use red onions but they make me bloat lol)

80g of feta crumbled

1tbsp Finley chopped fresh mint

Tsp of olive oil

Drizzle of balsamic glaze.

 

DIRECTIONS:

  1. In a large bowl add cubed or chopped watermelon, chopped up cucumber, spring onion and half your mint. Give it a good mix.

  2. Drizzle in your olive oil and mix again

  3. Crumble the feta over the salad

  4. Sprinkle remaining mint and add a little extra if you think it needs it.

  5. Drizzle the Glaze

 

NOTES: 

Tip add some freshly grilled prawns or chicken for a higher protein option.
