SUMMER FRESH SALAD

Until about an hour ago it was 34 degrees and sunny, now its thunder storms, but this is still one of my favourite salads.
Works well on its own, or with Chicken, fish or prawns.
Ingredients.
This typically serves 2, or as today went, served myself.
I don’t weight out my food, so this is a rough guess.
Watermelon 200g
1/2 cucumber peeled ( I peel my cucumber as the skin makes me bloat)
2 spring onions Finley chopped (you can use red onions but they make me bloat lol)
100g of feta
1tbsp Finley chopped fresh mint
Drizzle of olive oil
Drizzle of balsamic glaze.
  1. In a large bowl add cubed or chopped watermelon, chopped up cucumber, spring onion and half your mint. Give it a good mix.
  2. Drizzle in your olive oil and mix again
  3. Crumble the feta over the salad
  4. Sprinkle remaining mint and add a little extra if you think it needs it.
  5. Drizzle the Glaze
