1 medium egg
100 ml Egg whites
1 Slice Toast of choice
100g Raspberries (little side fibre yum)
Optional add on (Spinach)
Heat two pans with a little coconut oil
Chop mushrooms and add to one pan.
Whisk in a jug, 1egg, egg white and a table spoon of water
Pour into pan, and with a spatula pull the edges in and let set
Fold omelette in half
Season and serve with a side of mushrooms .
