1 medium egg

100 ml Egg whites

100g Mushrooms

15g Cheese  

1 Slice Toast of choice

100g Raspberries (little side fibre yum)

Optional add on (Spinach)



  1. Heat two pans with a little coconut oil

  2. Chop mushrooms and add to one pan.

  3. Whisk in a jug, 1egg, egg white and a table spoon of water

  4. Pour into pan, and with a spatula pull the edges in and let set

  5. Sprinkle Cheese

  6. Fold omelette in half

  7. Season and serve with a side of mushrooms .
